You have a very good point and an excellent question! Thank you!
To answer that I have to split that into two parts:
The three-value estimation
This is really a feature that I miss as well. Years ago we tried to implement this and after some user testing we found that most people were overwhelmed with it. Over 80% of all people didn't know where to enter their value. Most common quote, "I just want to enter my work or duration." (and at the mention of work and duration, many people are even overwhelmed with it). As a result we removed that feature even before we published it.
My solution with the three-value estimation is this: In many cases I can calculate the needed value in my head, of I use a handmade spreadsheet for that.
Monte Carlo simulation (MCS)
I don't want to judge our friends at OmniGroup, because I respect them very much. But I personally believe that an MCS is not well suited in a PM tool that is operationally focused on projects. The MCS is always positioned next to a project plan. Therefore, it is not implemented in the Merlin project and (most likely) never will be.
Back in 2018, I wrote an article on this topic and I recommended my personal heroes for risk management, namely Tom DeMarco and Tim Lister. These guys really get the MCS and they provide a tool along with documentation for it - for free!
Please give it a try!
